Making your own homemade salsa is very easy, and much healthier and cheaper (and tastier!) than buying it in stores. I pretty much just add in random amounts of ingredients depending on the size of the batch. Fresh salsa goes perfectly with burritos and tacos, or these kick-ass burrito bowls that I made recently!
For the salsa, I used:
- 4 small tomatoes (or 2 large)
- half a bunch of cilantro
- half a small red onion
- a couple cloves of garlic
- a pinch of salt
- a bit of lime or lemon juice
- a whole load of chili
Chop the ingredients up and then mix them lightly in your food processor or blender. If you have a Vitamix or other high power blender it literally requires one second. Any more than that and it gets pulverized into a salsa smoothie. A low power food processor or blender takes some more thorough pulsing.
For the burrito bowl, I added the salsa onto a bowl of brown rice, topped with avocado slices, corn, and pinto beans simmered in onions and garlic. For the burrito, I used pretty much the same ingredients but with the addition of Romaine lettuce and some grilled and seasoned tofu strips.
