Steamed Banana Muffin

This morning, I felt like experimenting with making a single steamed bun for breakfast. I just so happened to have a perfectly ripe banana lying around so I also threw that in, and it turned into a sort of banana-raisin steamed cupcake. So easy — and super tasty!

Here are the ingredients:

  • 2 heaping tbsp whole wheat flour
  • 1/2 tsp agave
  • 1/2 tsp baking soda
  • pinch of salt
  • raisins
  • 1 heaping tbsp ripe banana

I just mixed it all together lightly and steamed it for about 15-20 minutes. I also imagine a bit of cinnamon, nutmeg, or walnuts might make a great addition.

      I just have a little round steam rack that I put inside a pot on the stove. I add in a little bit of water, then place the muffin cup on the rack and let it steam at low heat for 15 mins. Let me know how it goes!

      1. Haha I don’t have an official muffin cup per se either — it’s just a little metal bowl that happens to be muffin-sized ;P
        A ceramic ramekin would work really well. So would a tempered glass dish.

    1. Haha glad you think so! I figure it’s a healthier alternative to just baking the muffin, plus this way I can just make them one or two at a time 🙂

  1. Excellent! I substituted coconut sugar for the agave, and used organic cranberries rather than raisins. Also added a dash of apple juice to moisten. The veggie steamer and the ramekin worked a treat! Way better than a microwave mug-cake! It’s like a nice little steamed pudding. Thank you so much for this!

      I love the apple juice idea. That sounds fantastic. I should definitely give that a try next time. I’ll bet the cranberries also worked great 🙂 I’ve been meaning to get hold of some coconut sugar sometime. Does it have a distinct flavour?
