Veggie Yakisoba (Japanese pan fried noodles)

Yakisoba is a very popular food in Japan, especially at festivals and among college students who want to cook up an easy but delicious hot meal. It is often made with little slices of pork mixed in, but take that out and it’s completely vegan.

For the sauce, I used:

  • 1/3 cup of veggie gravy (made with vegetable soup stock, starch, and black pepper)
  • 1 tbsp of Japanese “Bulldog” vegetable and fruit tonkatsu sauce
  • agave to taste
  • white pepper
  • salt to taste
  • five-spice powder

I mixed this in with the noodles (I used fresh ramen noodles), carrots, cabbage, onions, and mushrooms. As per tradition, I topped it with a bit of aonori (green laver).
