Tempura and Red Bean Rice

The other day, a family friend cooked us up a fantastic Japanese vegan lunch. The tempura was the best I’ve ever tasted! Apparently the trick is that she mixed Japanese mountain yam (yamaimo) into the batter. She also prepared some pickled veggies, along with sticky rice and azuki beans (sekihan), a traditional Japanese dish served on special occasions.
