Dinner last night was a veganized donburi. In the past, when I went to a Japanese restaurant and ordered a donburi, I would get beef (gyudon), or fried pork cutlet (katsudon), or chicken and egg (oyakodon).
But, “veggie-dons” are getting really popular in restaurants in Vancouver lately as the vegan population has been increasing. I made my own vegan donburi with slices of sweet bean curd fried to perfection on the stove in a non-stick pan (so no oil). Absolutely delicious!
