Fresh & Healthy Veggie Stew

Another thing I’ve been incorporating into my regular diet lately is my favorite veggie stews. It’s especially great this time of year with all the wonderful seasonal vegetables around!

This time, I used a miso & kombu broth with Japanese rice wine (sake). And I added in: tofu, red bell peppers, napa cabbage, baby carrots, onions, cauliflower, rapini, celery, konjaku noodles, white mushrooms, and pine mushrooms that I pick from the mountains in the fall.
