So, this was a new one for me. I’ve always loved Indian sweets, but this is the first time I’ve come across kaju pista rolls. As I expected, though, they’re wonderful!
What they are is actually a thick cashew paste (kaju barfi) with a pistachio paste filling (pista barfi)! The texture is similar to marzipan. Apparently, they are traditionally served wrapped in edible silver…but I didn’t happen to have any, so a cup of chai tea did nicely (:
