I picked up a bunch of these Meyer lemons for the first time the other day – they’re a hybrid between lemons & mandarin oranges, and they taste wonderful (:
I’ve taken to eating them straight, but really, they’re highly favoured for use in deserts…so I came up with a recipe for vegan lemon curd!
I just mixed together these ingredients:
- 1 tbsp agar-agar
- 1/2 cup soy milk
- 1 tbsp sweetener
- generous pinch of saffron
- 1 whole Meyer Lemon (just the juice haha)
- 1 tbsp glutinous rice flour
I heated them in a non-stick pot on the stove top at low heat, stirring until it thickened…and that’s about it!
I haven’t had lemon curd in a long time because it’s normally heavy on eggs and butter, so this was a real treat. I started out eating it by the spoonful, but it’s soo amazing on toast 😀
