Avocado’n Tofu Steak Sandwich!!

Today’s lunch creation was incredible!! I am so, soo pleased with how it turned out!

Slices of tofu steak and avocado on local pumpernickel = the most amazing sandwich ever! (and healthy, too)

The tofu steaks were made with slices of extra firm organic tofu, in the frying pan at low heat, together with:

  • 2 heaping tbsp of cajun spice
  • 2 tbsp soy sauce
  • 4 tbsp ketchup

I flipped the tofu every now and then to make sure the taste soaked through evenly.

I used a non-stick pan…so no oil, no grease!

I served it up open-face to make the meal look bigger than it really is, but all in all, it’s just 2 slices of bread, a quarter of one tofu package, and half a small avocado – so, a very healthy portion size even though it looks like a big steak dinner 🙂

At the table, we just assembled it into a big sandwich 😀

It tastes a lot like BBQ, and the avocado adds this really great rich, meaty texture!!
