Hummus & Red Pepper Wrap

Tonight’s dinner was a made by Karen: whole grain wrap with artichoke hummus, red peppers and tomatoes, toasted on the stove, using zero oil as always 🙂  The salad was my favorite cucumber and tomato with spices and hemp seeds sprinkled on top.

I had this together with a bowl of 9-bean & lentil curry with peppers, onion, and carrots to add sweetness, plus some blocks of tofu – the first curry I’ve made at home using garam masala!
