Toasted Vegan Egg Breakfast Burritos

Those chia scrambled eggs that I posted about the other day also came out pretty great in a breakfast burrito!

Vegan Sausage Roll

I’m absolutely loving the versatility of these whole grain wraps…so here’s another creation: a super quick and delicious vegan sausage roll!

I just wrapped up some vegan hot dog wieners in the tortillas and toasted them on the stove in a non-stick pan, and used hummus for toppings (:

The rest of my dinner was a nice salad, a few pieces of sweet vegan meat, and my favorite cashew biryani!

Vegan Apple Pie in 15 Mins!

Yup, the whole grain wraps are back…this time for dessert!

Before you say anything, I am fully aware that this is not technically “pie”, but I think it tastes even better! Not to mention it’s soo easy, fast, and most importantly – it’s healthy (:

What I did was thinly slice up an apple and wrap it in the tortilla, along with some chai spice, a teaspoon of brown sugar, and loads of cinnamon.

Then, I just let it sit on a non-stick pan at low heat for about 15 mins…the tortilla gets all crunchy…it’s just. so. gooood.

So anyways though, this was tonight’s desert :)

Super Quick Vegan Pizza!

For dinner tonight, I had a super quick (and healthy) vegan pizza…using my favorite whole grain tortillas (:

On top of the tortilla, I just laid down some salsa, red onions, peppers, oregano, vegan cheese, aaand vegan ham that I just picked up at one of those Taiwanese stores I keep raving about! (I’ll make a separate post on the ham later)

Mmm..Cashew Biryani & Tofu Meat Pie!

This is a good one! …Really good!

Biryani:

More Indian food! First, I just cooked up some brown rice. Then, I threw some chopped up peppers into a wok, added in 2 heaping tbsp of biryani spice (this can vary depending on how spicy you like it), and mixed the rice in along with baby spinach and cashew nuts.

I put on the lid and let this cook at low heat for a while so the taste would permeate all the way through (:

Tofu meat pie:

I wanted to keep it healthy, so none of the pastry stuff – I used a whole grain tortilla instead. But it truly tastes incredible!

I first cooked up some tofu stakes, same way that I did for my tofu burgers.

Then, I wrapped them up in the tortillas and put it in the frying pan (no oil, just dry) at low heat, and returned to flip them every once in a while.

…All this plus some veggies and a little bowl of hummus ~yummy (:

Stuffed Peppers!

Tonight was my first try at mini stuffed peppers, and they were incredible! For stuffing, I used my favorite tofu scramble consisting of extra firm tofu mixed in with almond butter, salsa, Dijon mustard, soy sauce, and any herbs and spices I happen to have .

Here the peppers are, completely stuffed and ready to be cooked:

I added on top tons of freshly ground black pepper, red onions, strips of sweet tofu meat, and the tiniest drop of oil.

…and here’s the final product!

I’m so, so happy with this first try at stuffed peppers! I ate two, and there’s plenty of leftovers – plus, any left over tofu hash can be used for meatballs or as filling for whole grain tortillas along with some hummus and quinoa!

Hummus & Red Pepper Wrap

Tonight’s dinner was a made by Karen: whole grain wrap with artichoke hummus, red peppers and tomatoes, toasted on the stove, using zero oil as always :)  The salad was my favorite cucumber and tomato with spices and hemp seeds sprinkled on top.

I had this together with a bowl of 9-bean & lentil curry with peppers, onion, and carrots to add sweetness, plus some blocks of tofu – the first curry I’ve made at home using garam masala!

Quinoa & Tofu Wrap

Recently I’ve discovered how amazing whole grain tortilla wraps are when toasted in a pan on the stove…no oil! This was my lunch today – it contains a quinoa salad, hummus, and a tofu hash that I prepared last night.
