Picked up some snow pea shoots at the market the other day, and decided to make a smoothie out of them! This was a first for me, but it was surprisingly good. The colour turned out a bit lighter than my regular baby spinach smoothies, and the taste was very pleasant and mild. I put a big bag of them in the freezer, because I’m pretty sure I’ll be making a lot more of these!

This was what I grabbed for breakfast before running off to campus this morning!

Maple & pumpkin jam along with sesame butter on a Weetabix. Can’t even begin to describe how amazing this tastes!!
Plus a spinach, banana, and apple smoothie…now this is my kind of breakfast!

Last night, I put a couple dried figs in some water and let them soak overnight. I usually just eat them dry, but this may be my new favorite!

The water turns deliciously thick and syrupy – I just drank it this morning, but as an afterthought I realized that it might be amazing in my breakfast oatmeal…next experiment =)
But anyhow, together with a strawberry, peach, and melon smoothie – today’s breakfast was soo sweet!

I’m so excited about my experimental matcha chia bubble tea this morning!

First, I mixed 1 tbsp of chia in a little bit of water and left it in a cup for an hour.
Then, I blended together the following ingredients:
- a handful of spinach
- a quarter of a banana
- a tiny bit of matcha (about 1/8 tsp)
- 1 cup of soy milk
- a few ice cubes
I poured this over top of the chia and sprinkled a little matcha on top:


Then, I just stirred it up with a straw and poured it into a smaller glass. The chia seeds gave it a great texture! Plus, the banana and soy milk added so much sweetness that there’s absolutely no need to add sugar =)

I experimented with a green tea chia pudding for desert tonight – it was really sweet and tasted like green tea, but I actually added no sugar and the green colour comes mainly from spinach! I mixed in chia seeds with a small amount of my spinach smoothie this morning and let it sit in the fridge through the day.
Tonight I mixed some pearl barley flour with hot water and added that to the chia – this is what gives it the sweetness. Then I sprinkled hemp seeds and green tea on top…plus a vegan pastry!

This morning I took before and after photos to show how much veggies and fruit can get condensed down into one drink which I typically add on to my breakfast and it keeps me full for hours. I try to drink a couple of these every day – I just throw in any fruits & veggies I have lying around, usually along with a main baby spinach base, and it always tastes great!
