This morning I ended up having a good old fashioned bowl of granola for breakfast – with Brazil nuts, hazelnuts, blueberries, bananas, and soy milk. Having typical ‘breakfast’ foods in the morning is a bit unusual for me, but this was a huge treat!
I’ve recently decided to go organic with my bananas, and I’m surprised that they actually taste much better than regular bananas, and they last longer, too!

This was dessert last night:
Freshly peeled grapefruit with banana slices and almond flavoured tofu, topped with pastry flakes. The perfect combination!

I cooked up another batch of my rhubarb stew, and also discovered the most delicious way to serve it!
Slices of banana, apple (adds a great crunchiness!), and strawberries, topped with maple caramel flavour dessert tofu. Perfect

Picked up some snow pea shoots at the market the other day, and decided to make a smoothie out of them! This was a first for me, but it was surprisingly good. The colour turned out a bit lighter than my regular baby spinach smoothies, and the taste was very pleasant and mild. I put a big bag of them in the freezer, because I’m pretty sure I’ll be making a lot more of these!

Mixed up some lemonade for a quick study break:
I like to keep things simple & healthy, so it was just:
- 1 whole Meyer Lemon (yup, peel and all! ..makes it frothy!)
- half a ripe banana

Here’s what I had for tea today (:
The biscuits were super easy and quick to make! I just gathered up the following ingredients:
- quick oats
- a strawberry (sliced)
- half a banana (very ripe)
- a pinch of cinnamon
- soy milk
Then I mixed them up with a spoon and put them in a frying pan on the stove at medium heat, flipping them occasionally for about 15 minutes.
I had them together with some organic blackcurrant hibiscus herbal tea (I love this stuff)!

Tonight’s desert was a real treat – it turned out amazing!
- 2 small pieces of melted vegan chocolate
- 1 dried fig, finely chopped
- chia seeds pre-soaked in soy milk
- 2 tbsp of pearl barley flour
…and I just mixed them into a paste and put it on top of a sliced banana.
For topping, I used hemp seeds, granola, and some cocoa powder. Really, really yummy!!
