I cooked up another batch of my rhubarb stew, and also discovered the most delicious way to serve it!
Slices of banana, apple (adds a great crunchiness!), and strawberries, topped with maple caramel flavour dessert tofu. Perfect
I really felt like some dessert the other night so I decided to throw together a single serving of rice pudding. Here’s what I came up with!
- My first ever attempt at rice pudding, but it turned out great & it’s super easy!
…and for desert tonight, I threw together a couple chocolate and apple cinnamon oat cakes
The recipe is a work in progress, but it contains undetermined portions of: oats, vanilla, almond butter, powdered chia, and soy milk…plus optional banana, cinnamon, apple, or chocolate. I’ll get more precise than this when I perfect the recipe (:

I sliced up an apple and heated it in the microwave until soft, then just mixed it up with a spoon – I use the yellow transparent variety because that’s what we grow on our tree back home and it gets particularly soft, but I think any apple that’s good for pie should work.
Then I mixed in some cinnamon, chai masala, and a tad of rice flour to thicken it up.
…And then I added on some granola & walnuts, plus a vegan pastry! (if you don’t have granola, most breakfast cereals work great)

I’ve recently made the switch from rolled/quick oats to steel cut oats, and I’m wondering what took me so long because these taste great and they’re really nutritious!
This morning’s oats were topped with some apples, walnuts, and nutmeg
Rather than the whole saucepan and stove thing, I opted to put a few cups of oats in the rice cooker and forget about them for an hour or so. They came out perfect! And so easy, too, because I had initially been hesitant about steel cut oats because of the long cooking time. But, it’s absolutely worth it – the taste and texture is surprisingly different from the oats I’m used to, and they’re really filling!
